I found this recipe years ago on . Makes an easy side dish! This is great if you have leftover cooked carrots. I've used frozen and canned carrot slices - whichever I've had handy. Ingredients:
1 cup cooked carrot, mashed |
2 eggs |
1/2 cup ritz cracker crumbs |
1 cup milk |
1/2 teaspoon pepper |
1 tablespoon sugar |
6 tablespoons butter, melted |
1 cup shredded cheddar cheese |
Directions:
1. Preheat the oven to 375°F. 2. Mix together all the ingredients. Pour into a greased 8 inch square dish. 3. Bake for 40 to 45 minutes. |
