Carrot Cake with Cream Cheese Frosting |

My Mom has made this cake for me since I was a little girl. It is very delicious and very moist. You can add nutmeats if you desire. Ingredients:
2 cups flour |
2 teaspoons baking powder |
1 1/2 teaspoons baking soda |
1 teaspoon salt |
2 teaspoons cinnamon |
2 cups white sugar |
1/4 cup oil |
4 eggs |
1 can crushed pineapple |
1 cup coconut |
2 cups grated carrots |
1 (8 ounce) package cream cheese |
1/2 cup butter |
1 teaspoon vanilla |
icing sugar |
Directions:
1. Cake: Sift flour, baking powder, baking soda, and salt. 2. Add other ingredients up to and including the eggs and mix. 3. Blend in grated carrots, well drained pineapple and coconut. 4. Bake in 9x13 pan at 350F for 35-45 minutes. 5. Frosting: Cream together first three ingredients, and add icing sugar as needed to reach desired consistency. 6. Spread on cake when cooled. |
