Carrot Cake With Brown Sugar Sauce |

Have not tried this..but hoped it would be moist with the carrots and apples in it...the sauce sounded intriguing, different that cream cheese topping Ingredients:
2 cups granulated sugar |
1/2 cup butter, softened |
1 cup vegetable shortening |
2 large eggs |
3 cups apples, grated |
1 cup carrot, grated |
4 cups boiling water |
2 cups all-purpose flour |
2 teaspoons baking soda |
2 teaspoons cinnamon |
1 teaspoon nutmeg |
1/2 teaspoon salt |
1 1/2 cups brown sugar, packed |
1 teaspoon vanilla |
4 tablespoons butter |
4 tablespoons cornstarch |
1 teaspoon nutmeg |
4 cups boiling water |
Directions:
1. Cream butter, shortening and eggs, beat till fluffy - 2. Mix in apple and carrot. 3. Sift dry ingredients together and add to creamed mizture. 4. Bake in a greased 13x9 pan - at 350* for 30-45 minutes.until toothpick tests clean when inserted near the center - 5. May be served warm or cold. 6. to prepare BROWN SUGAR SAUCE:. 7. Boil water in a seperate pan - Mix sugar and cornstarch in another pan and add boiling water slowly, bring to a boil. 8. Stirring constantly for 5 minutes. 9. Remove from heat and add vanilla.butter and nutmeg. 10. Serve warm, ovr carrot cake. |
