This came from Appetizing Vegetarian Breakfast Recipes. I haven't tried this, just posting for safe keeping. Ingredients:
4 cups water |
1 cup steel cut oats |
1 apple, cored, peeled and chopped |
1/2 cup shredded carrot |
1/2 cup raisins |
1 teaspoon ground cinnamon |
1/2 teaspoon ground nutmeg |
1/2 teaspoon ground ginger |
1 pinch salt |
1 tablespoon butter |
3/4 cup sliced pecans |
1 tablespoon brown sugar |
1/2 cup plain yogurt |
Directions:
1. To prepare: boil the water in a large, heavy pan and mix the oats inches Lower the heat to simmer then cook the oats until they start to thicken. Stir in the carrot, apple, cinnamon, raisins, ginger, salt and nutmeg. 2. Allow the oats to simmer until tender. Melt the butter into a skillet on medium to low heat, then mix the pecans inches Roast the nuts until partially browned, then add brown sugar and mix until it has melted over the pecans. Serve in dishes, topped around 2 tablespoons of the pecan mix and a helping of yogurt. |
