If you use oat flour in your gluten free diet, this is the best carrot cake recipe I have found. I've successfully used guar gum in place of xanthan gum, increasing to Ingredients:
1/3 cup oil |
3/4 cup sugar |
2 eggs |
1 egg white |
1/2 cup apple juice |
1 1/3 cups oat flour |
1 tablespoon baking powder |
1/4 teaspoon baking soda |
1/4 teaspoon salt |
1 teaspoon vanilla extract |
1 teaspoon ground cinnamon |
1/4 teaspoon xanthan gum |
1 cup grated carrot, packed |
Directions:
1. Preheat the oven to 350 degrees F. Lightly grease a 9 inch round or square pan. 2. In a medium size bowl, mix the oil with the sugar. Add eggs and egg white. Mix until light and thick. Add the other ingredients and beat well. 3. Pour into prepared pan. Bake for 30-40 minutes, until a toothpick inserted in the middle tests cleanly. |
