The pineapple in this cake makes it wonderfully moist and delicious. Ingredients:
1 1/2 cups oil |
3 eggs |
2 cups sugar |
2 1/2 cups flour |
2 cups grated raw carrots |
2 teaspoons baking soda |
2 teaspoons cinnamon |
1 (20 ounce) can crushed pineapple |
1 cup chopped nuts (i use walnuts) |
1 teaspoon salt |
1 (8 ounce) package cream cheese |
1 tablespoon margarine |
1 lb powdered sugar |
1 teaspoon vanilla |
1 -2 teaspoon milk, to thin |
1 dash salt |
Directions:
1. Mix all cake ingredients together and bake at 350° for 50 minutes in 9x13-inch baking pan. 2. Blend all icing ingredients well and cover cake generously. |
