Ingredients:
2 cup(s) flour
2 teaspoon(s) cinnamon
2 teaspoon(s) baking powder
1 1/2 teaspoon(s) baking soda
1 teaspoon(s) sea salt
2 cup(s) granulated sugar
4 ex large eggs
1 1/2 cup(s) peanut oil
2 cup(s) shreaded carrots
8 ounce(s) crushed pinapple w juice
3/4 cup(s) nuts (your choice)
1 box(es) confectioners sugar
1 stick(s) butter ( please don't use margerine)
8 ounce(s) soffened cream cheese
1 1/2 teaspoon(s) vanilla extract
Directions:
1. mix first 5 ingredents set aside
2. mix sugar, eggs and oil, add to flour mixture and mix well with mixer
3. add carrots, pinapple and nuts by hand mixing well ( I sometimes add raisins or dried cranberries for a different twist)
4. line 3 round cake pans with wax paper spray with cooking spray divide batter evenly in pans.
5. Bake at 350 degrees 30 - 40 mins.
6. let cool for 15 mins. remove to wire rack remove wax paper allow to completely cool
7. icing
8. cream softened butter and cream cheese with mixer
9. slowly add sugar mixing well then add vanilla. If it is too thick add half& half 1 tsp at a time till desired consistancy is achived
10. Place 1 layer on cake plate, spread a thin layer of icing on top then add another layer with icing.Add the last layer and spread the rest of icing spreading over top and sides.
11. This cake wil stay very moist when covered for several days if it lasts that long.
