a wonderful fruity carrot cake made with whole wheat Ingredients:
2 cups whole wheat flour |
1teaspoon baking soda |
1 teaspoon baking powder |
1 1/2 teaspoon cinnamon |
1 teaspoon nutmeg |
2 eggs |
2/3 cup vegetable oil |
2/3 cups buttermilk |
2 teaspoons vanilla |
1 cup honey |
4 cups grated carrots |
1 cup broken pecans |
1 cup grated coconut |
1 1/2 golden raisins |
20 ozs drained pineapple |
frosting |
8 oz cream cheese |
2-3 tablespoons milk |
1 teaspoon vanilla |
1/2 pound powder sugar |
Directions:
1. Stir together the flour, soda, baking powder, cinnamon,and nutmeg, set aside. 2. In a large bowl, beat eggs, oil, buttermilk, vanilla, and honey . 3. Mix in dry ingredients until well blended 4. stir in all remaining ingredients and mix until just blended 5. spread into greased 9x13 glass pan 6. bake at 350 for 60 minutes 7. let cool and frost with cream cheese frosting 8. frosting 9. beat together all ingredients until smooth. |
