Small loaf-tin cake and healthy
Ingredients:
1 cup plain flour
1 cup sugar
1/2 teaspoon bi-carb
1/2 tsp baking powder
a pinch of salt
1 tsp cinnamon
1/4 tsp nutmeg
3/4 cups vegetable oil
1 1/2 cups grated carrot
2 eggs, beaten
1/2 cup chopped pecans
Directions:
1. 1. Place flour, sugar, bi-carb, baking powder, nutmeg and cinnamon into mixing. Add the oil and beaten eggs one at a time, then add the carrot and fold in the pecans.
2. 2. Bake at 180C for about 40 minutes, or until a skewer comes out clean.
