Small loaf-tin cake and healthy Ingredients:
1 cup plain flour |
1 cup sugar |
1/2 teaspoon bi-carb |
1/2 tsp baking powder |
a pinch of salt |
1 tsp cinnamon |
1/4 tsp nutmeg |
3/4 cups vegetable oil |
1 1/2 cups grated carrot |
2 eggs, beaten |
1/2 cup chopped pecans |
Directions:
1. 1. Place flour, sugar, bi-carb, baking powder, nutmeg and cinnamon into mixing. Add the oil and beaten eggs one at a time, then add the carrot and fold in the pecans. 2. 2. Bake at 180C for about 40 minutes, or until a skewer comes out clean. |
