Lotsa carrots and Wholemeal ( atta ) flour lying in the fridge after the weekend party . So , thought of baking something , ...... well almost healthy !!!! Ingredients:
150 g wholemeal or atta flour |
150 g plain flour |
2 tsps baking powder |
1 tsp baking soda |
1 tsp fine salt |
2 tso ground cinnamon |
1/2 tsp ginger |
250 g golden brown sugar |
250 ml olive oil |
4 medium eggs , beaten lightly |
300 g grated carrot |
150 g canned pineapple , drained and chopped |
50 g walnuts , chopped |
50 g raisins |
lemon rind , grated ( used from 1 lemon ) |
icing |
150 g cream cheese |
1 tbsp fresh lemon juice |
grated rind of a lemon . |
200 g icing sugar . |
50 g butter . |
Directions:
1. Sift all the dry ingredients 2. Pre heat the oven to 180 degrees 3. Grease a loaf tin 4. Beat the eggs , oil and sugar . 5. Add the flour . Beat well . 6. Add the remaining ingredients . 7. Pour the batter into teh loaf tin . Bake for above 90 mins . 8. Cool it . 9. Icing 10. Beat all the ingredients until smooth enough and pour over the cake . |
