Moist carrot cake...ice with Cream Cheese Frosting.
Ingredients:
2 cups sugar
1 1/2 cups vegetable oil
4 eggs
1 tsp salt
2 cups flour
1 tsp soda
2 tsp cinnamon
3 cups grated carrots
1/2 cup chopped nuts
Directions:
1. Mix sugar, eggs & oil. Sift together dry ingredients and mix with egg mixture. Add carrots and nuts. Pour into two prepared 9-inch layer cake pans. Bake at 300^F for 40-50 minutes.
2. Frost with Cream Cheese Frosting
