Ingredients:
2 cups sugar
1 1/2 cups salad oil
4 eggs, beaten
3 cups self-rising flour
2 teaspoons ground cinnamon
2 cups grated carrot
1 1/2 cup chopped pecans
Directions:
1. Combine sugar, oil, and eggs; beat well.
2. Blend in flour and cinnamon.
3. Add carrots and nuts, mixing well.
4. Pour into a well-greased and lightly floured 10-inch tube pan or Bundt pan.
5. Bake at 350 degrees for 1 hour or until cake test done.
6. Yield: one 10-inch cake.
