Moist carrot cake with cream cheese icing yum yum Ingredients:
2 cups sugar |
1 cup oil |
4 eggs |
2 cups flour |
2 teaspoons baking powder |
1 1/2 teaspoons baking soda |
1 teaspoon salt |
2 teaspoons cinnamon |
3 cups grated carrots |
1/2 cup chopped pecans |
cream cheese icing as follows |
1 stick margarine/or butter |
8 ounces cream cheese |
1 teaspoon vanilla |
1 pound powdered sugar |
1 cup finely chopped pecans |
Directions:
1. Cream sugar and oil 2. add eggs and beat well. 3. sift together dry ingredients and add to sugar mixture. 4. fold in carrots and pecans. 5. pour into 2 greased and floured 9 inch round cake pans. 6. bake at 360 degrees for 35 minutes .cool and decorate layers 7. cream cheese icing as follows 8. cream together margarine and cream cheese. 9. add vanilla, beat in powdered sugar. 10. fold in pecans, spread generously between layers then on sides and on top...... then enjoy |
