This is a very moist cake and very easy to make. It is my husband's favorite. Ingredients:
2 cups sugar |
1 1/2 cups vegetable oil |
4 eggs |
2 cups unbleached all-purpose flour |
1 teaspoon salt |
2 teaspoons baking soda |
2 teaspoons cinnamon |
3 cups grated carrots |
1/2 cup chopped nuts |
1 (8 ounce) package cream cheese, softened |
3/4 cup butter, softened |
1 lb confectioners' sugar |
1/2 cup chopped nuts |
2 teaspoons vanilla |
Directions:
1. Preheat oven to 350°. 2. In a large bowl, mix sugar, oil, and eggs. 3. Sift dry ingredients together and gradually add to wet mixture. 4. Stir in grated carrots and nuts. 5. Pour into a greased and lightly floured 9x13-inch pan or 3 9-inch layer cake pans. 6. Bake for 45 minutes. 7. Remove from oven and cool on a wire rack. 8. Frost with Cream Cheese Frosting. 9. CREAM CHEESE FROSTING: Cream butter and cream cheese. 10. Add confectioners' sugar and mix well. 11. Add nuts and vanilla. 12. Spread on cooled cake. 13. Note: Nuts can be omitted from frosting if desired. |
