I haven't made it yet but my cousin gave me the recipe and her mom says it is great! Ingredients:
3 cups sugar |
3 cups self rising flour |
2 teaspoons cinnamon |
1 1/2 cups cooking oil |
4 eggs |
3 cups grated carrots |
1 cup chopped nuts |
12 ounces cream cheese, softened |
1/2-1 cup margarine, softened |
1 teaspoon vanilla |
1 1/2 boxes powdered sugar |
1 cup nuts |
Directions:
1. Grease and flour 2 9-inch or 3 8-inch cake pans. 2. Mix all dry cake ingredients. 3. Add oil and eggs. 4. Add carrots and nuts. 5. Mix well. 6. Pour into pans and bake 25 to 30 minutes at 350. 7. Mix all frosting ingredients well and spread between layers and top of cake. |
