This carrot cake is one of my absolute favorite recipes made by my mother Ruth. This cake has been her most requested cake to be made. This is definitely a family favorite recipe. Ingredients:
2 cups sugar |
1 1/2 cups wesson oil |
2 cups carrots (grated) |
2 cups cake flour |
2 teaspoons baking soda |
2 teaspoons baking powder |
2 teaspoons cinnamon |
4 large eggs |
1 1/2 cups pecans, chopped |
1 (8 ounce) package cream cheese |
1/4 cup butter |
1 lb confectioners' sugar |
2 tablespoons vanilla |
Directions:
1. Mix wesson oil and sugar. Add carrots. Mix and then add flour and spices. Add eggs one at a time. Bake for 25 minutes in a 300 degree oven. 2. Cool. Ice with cream cheese frosting. |
