This carrot cake is one of my absolute favorite recipes made by my mother Ruth. This cake has been her most requested cake to be made. This is definitely a family favorite recipe.
Ingredients:
2 cups sugar
1 1/2 cups wesson oil
2 cups carrots (grated)
2 cups cake flour
2 teaspoons baking soda
2 teaspoons baking powder
2 teaspoons cinnamon
4 large eggs
1 1/2 cups pecans, chopped
1 (8 ounce) package cream cheese
1/4 cup butter
1 lb confectioners' sugar
2 tablespoons vanilla
Directions:
1. Mix wesson oil and sugar. Add carrots. Mix and then add flour and spices. Add eggs one at a time. Bake for 25 minutes in a 300 degree oven.
2. Cool. Ice with cream cheese frosting.
