My wife brought this recipe home from work. We made it for a church function and it was a real hit. Ingredients:
2 cups flour |
2 cups sugar |
2 teaspoons baking powder |
2 teaspoons baking soda |
1 teaspoon salt |
2 teaspoons cinnamon |
1 1/4 cups vegetable oil |
2 lbs carrots, grated |
4 eggs |
1/2 cup nuts (i used walnuts) |
2 teaspoons vanilla |
1 (16 ounce) container cream cheese frosting |
Directions:
1. Combine flour, sugar, baking powder, baking soda. salt, and cinnamon in a large bowl. Mix until blended. 2. Add oil to flour mixture while mixing. Then add the carrots and eggs, one at a time, mixing well after each addition. 3. Stir in nuts and vanilla; mix well. 4. Pour into a well greased and floured 9X13 pan. Bake in a preheated 350°F oven 50 to 60 minutes or until done. 5. Allow to cool thoroughly. Frost with frosting. |
