This is a family favorite of nearly everyone you know - this is a very simple recipe - You can frost it later with your favorite cream cheese frosting. Ingredients:
2 cups sifted flour |
2 teaspoons baking powder |
1 1/2 teaspoons baking soda |
1 teaspoon salt |
2 1/2 teaspoons cinnamon |
2 cups sugar |
1 1/2 cups vegetable oil |
4 large eggs |
2 3/4 cups carrots, coarsely grated |
1 (8 ounce) can unsweetened crushed pineapple, drained |
1 cup walnuts, chopped |
1 cup coconut, shredded |
1/4 cup icing sugar |
Directions:
1. Grease and line three 9-inch round baking tins. 2. Sift together flour, baking powder, soda, salt and cinnamon. 3. In a large bowl, blend together sugar, oil and eggs. Gradually add flour mixture to the sugar mixture, blending well. Tnen add the carrots, drained pineapple, nuts, and coconut; blend thoroughly. 4. Turn into greased pans. 5. Bake at 350F for 45 minutes and test for doneness. Cool a few minutes before removing from pans. |
