This was my Mom's recipe for Carrot Cake. A simple recipe that just tastes so good and reminds me of when I was a kid! Ingredients:
2 cups sugar |
2 cups flour |
1 1/2 cups oil |
1 teaspoon salt |
2 teaspoons baking soda |
1 teaspoon cinnamon |
3 cups grated carrots |
5 eggs |
1 1/2 cups chopped walnuts (optional) |
1 (8 ounce) package cream cheese |
1/4 cup margarine |
1 lb powdered sugar |
2 teaspoons vanilla |
Directions:
1. For the cake: Preheat oven to 350 degrees. 2. Combine dry ingredients. 3. Stir in oil, eggs and grated carrots. 4. Beat for 2 minutes by hand. 5. Add nuts and mix thoroughly. 6. Bake in greased and floured 13 x 9 inch pan for 45 minutes. 7. For the frosting: Beat the cream cheese, margarine, powdered sugar and vanilla till light and fluffy. 8. Spread on cooled cake. |
