This recipe came from from my roommate Marjie's friend, Mrs. Roseberry. Ingredients:
2 cups sugar |
2 cups flour |
2 teaspoons baking soda |
2 teaspoons cinnamon |
1/2 teaspoon salt |
4 eggs |
1 1/2 cups canola oil |
3 cups carrots, grated |
1 cup walnuts, chopped |
1/2 cup butter |
1 (8 ounce) package cream cheese |
1 lb powdered sugar |
Directions:
1. Beat all ingredients in large bowl until smooth. 2. Pour into 9 x 13 pan or 2 9 layer pans. 3. Bake at 350°F 2 layer 35-45 minute. 4. 13 x 9 45-50 minute. 5. Let cake cool. 6. Beat frosting ingredients until smooth. 7. Frost cake. Sprinkle on some chopped nuts if desired. |
