This is an awesome carrot cake. Really moist.
Ingredients:
2 cups all-purpose flour
3 cups grated carrots
2 cups sugar
1 cup cooking oil
1 teaspoon baking powder
4 eggs
1 teaspoon baking soda
1 teaspoon salt
1 teaspoon ground cinnamon
Directions:
1. Grease and lightly flour baking pans.
2. 2 8x11/2 inch or 9x11/2 inch.
3. Preheat oven to 325.
4. In mixing bowl stir together all the dry ingredients.
5. Add carrot, cooking oil and eggs and beat together on low till combined.
6. Beat on medium speed for 2 minutes.
7. Turn into prepared pans.
8. Bake for 40 minutes or until toothpick comes out clean.
9. Cool 10 minutes in pans then remove to racks to completely cool.
10. (If you want on a one layer cake just divide all ingredients in half.).
