You can leave out the carrot and add another 3/4 cup shredded cabbage if your low-carb plan does not allow carrots. The carbo rating will be the same. Ingredients:
1 1/4 cups shredded cabbage |
3/4 cup shredded carrot |
1/4 cup grated red delicious apple |
1/4 cup crushed pineapple in juice, drained |
1/4 cup light mayonnaise |
1 tablespoon lemon juice |
cabbage leaves (optional) |
Directions:
1. Combine first 6 ingredients in a medium bowl; toss well. Cover and chill thoroughly. 2. Spoon coleslaw into a cabbage-lined bowl before serving, if desired. 3. carbo rating: 7 |
