I found this recipe on & tweaked it a tiny bit by adding parsley & thyme. Ingredients:
1 1/2 cups carrots, diced |
2 cups corn flakes, crushed |
2 eggs, beaten |
1/4 cup celery, finely chopped |
1 tablespoon onion, finely chopped |
1/2 teaspoon salt |
1/2 teaspoon parsley |
1/4 teaspoon thyme |
1/4 teaspoon sugar |
1/8 teaspoon pepper |
2 tablespoons vegetable oil |
hamburger bun |
Directions:
1. Place carrots in a saucepan with a small amount of water. Bring to a boil; reduce heat. 2. Cover and cook for 5 minutes or until tender then drain. 3. In a bowl, combine carrots, cornflakes, eggs, celery, onion, salt, sugar and pepper; mix well. 4. Form into six patties & squash them down. 5. Heat oil in a skillet over medium heat & cook patties for 3 minutes on each side or until browned. 6. Serve on lightly toasted buns. |
