This bread is so moist and good I have made many loaves since I found it.
Ingredients:
1 1/2 cups flour
1 teaspoon baking soda
1 teaspoon baking powder
1/4 teaspoon cinnamon
3/4 cup sugar
1/2 cup oil
2 eggs
1 1/2 cups shredded carrots
1 cup nuts
1/2 cup raisins (optional)
Directions:
1. Preheat oven to 350.
2. in a small bowl whisk together flour, baking soda, baking powder and cinnamon.
3. In a large bowl mix sugar, oil and eggs.
4. Mix in flour mixture.
5. Gently fold in carrots, nuts and raisins.
6. Pour batter into a greased bread pan.
7. Bake for 45 minutes or until sides pull away from pan.
8. Zucchini can be substituted for the carrots, use 2 cups of shredded zucchini for carrots.
