This bread is so moist and good I have made many loaves since I found it. Ingredients:
1 1/2 cups flour |
1 teaspoon baking soda |
1 teaspoon baking powder |
1/4 teaspoon cinnamon |
3/4 cup sugar |
1/2 cup oil |
2 eggs |
1 1/2 cups shredded carrots |
1 cup nuts |
1/2 cup raisins (optional) |
Directions:
1. Preheat oven to 350. 2. in a small bowl whisk together flour, baking soda, baking powder and cinnamon. 3. In a large bowl mix sugar, oil and eggs. 4. Mix in flour mixture. 5. Gently fold in carrots, nuts and raisins. 6. Pour batter into a greased bread pan. 7. Bake for 45 minutes or until sides pull away from pan. 8. Zucchini can be substituted for the carrots, use 2 cups of shredded zucchini for carrots. |
