From a friend in Florida. Great way to get my kids to eat some veggies! Ingredients:
2 eggs, beaten |
1/2 cup canola oil |
1/2 cup carrot, shredded |
1 cup sugar |
1 1/2 cups flour |
1 teaspoon baking soda |
1 teaspoon cinnamon |
1/4 teaspoon salt |
1/2 cup chopped nuts (optional) |
Directions:
1. Mix carrots and all wet ingredients. 2. Mix dry ingredients. 3. Add the dry ingredients to the wet. 4. Pour into well greased and floured loaf pan. 5. Bake at 350 for 50-60 minute until fork comes out clean. |
