I'm not a big lover of carrot cake but this bread is so good and moist. My husband loves it!
Ingredients:
1 1/2 cups flour
1 1/2 cups carrots, shredded
3/4 cup granulated sugar
2 teaspoons cinnamon
1 1/2 teaspoons baking soda
1/4 teaspoon salt
3/4 cup water
2 eggs
2 tablespoons olive oil
1 teaspoon vanilla extract
Directions:
1. Preheat oven to 350 degrees.
2. Prepare 8x5 loaf pan with cooking spray; set aside.
3. Combine flour, carrots, sugar, cinnamon, baking soda & salt.
4. Add water, eggs, oil & vanilla. Mix until moistened.
5. Pour batter into prepared loaf pan.
6. Bake for 1 hour or until toothpick inserted in center comes out clean.
