I'm not a big lover of carrot cake but this bread is so good and moist. My husband loves it! Ingredients:
1 1/2 cups flour |
1 1/2 cups carrots, shredded |
3/4 cup granulated sugar |
2 teaspoons cinnamon |
1 1/2 teaspoons baking soda |
1/4 teaspoon salt |
3/4 cup water |
2 eggs |
2 tablespoons olive oil |
1 teaspoon vanilla extract |
Directions:
1. Preheat oven to 350 degrees. 2. Prepare 8x5 loaf pan with cooking spray; set aside. 3. Combine flour, carrots, sugar, cinnamon, baking soda & salt. 4. Add water, eggs, oil & vanilla. Mix until moistened. 5. Pour batter into prepared loaf pan. 6. Bake for 1 hour or until toothpick inserted in center comes out clean. |
