So tasty and relatively good for you. I eat a square of it for breakfast with a little bit of yogurt and I feel spoiled!! Sometimes I use slightly less sugar (1/2 c)and it's still fabulous. Would also be good with a big scoop of vanilla ice cream. Ingredients:
1 1/4 cups quick oats |
1 cup flour |
2/3 cup sugar |
1 1/2 teaspoons baking powder |
1 teaspoon baking soda |
1/4 teaspoon salt |
1/2 teaspoon cinnamon |
1/2 teaspoon ginger |
1 large egg |
1 cup over-ripe banana |
1 cup shredded carrot |
1/3 cup butter, melted |
2 tablespoons peanut butter |
1 teaspoon vanilla |
1 tablespoon lemon juice |
1/2 cup nuts (optional) |
Directions:
1. Combine dry ingredients (and nuts if desired, I like sunflower seeds)in a large bowl. 2. Mix together until smooth: beaten egg, banana, carrot, melted butter, peanut butter, vanilla, and lemon juice. 3. Add this to the dry ingredients and stir just until moistened. 4. Pour into a greased 8x8-inch square pan. 5. Bake at 375°F for 45 minutes to 1 hour or until done. 6. NOTE: Depending on the oven you may want to try 350°F. |
