Ingredients:
2 cups sliced carrots, cooked and mashed |
1 1/2 cups soft breadcrumbs |
1 cup (4 ounces) shredded sharp cheddar cheese |
1/2 teaspoon salt |
1/4 teaspoon pepper |
dash of hot sauce |
1 egg white |
1 1/4 cups coarsely crushed cornflakes |
Directions:
1. Combine carrots, breadcrumbs, cheese, salt, pepper, and hot sauce; toss lightly. Beat egg white (at room temperature) until stiff peaks form; fold into carrot mixture. (Mixture may be chilled at this stage. ) 2. Shape mixture into 2-inch balls; roll in cornflakes. Place balls on a lightly greased baking sheet. Bake at 375° for 30 minutes or until golden brown. |
