Carrot and Strawberry Salad With Fresh Cilantro |

As I was drifting off to sleep the other night, the idea splashed across my mind of carrot salad with strawberries (and not the more usual raisins or pineapple). Ingredients:
2 tablespoons olive oil |
juice of half lemon |
juice of half lime |
2 cups grated indigo carrots (or standard orange carrots) |
1 cup strawberry (sliced) |
about 2-3 tablespoons fresh cilantro (cilantro minced, basil cut into ribbons) or fresh basil (cilantro minced, basil cut into ribbons) |
thin strips lemon zest and thin strips lime zest |

Directions:
1. Whisk the olive oil, lemon juice and lime juice together in a large non-reactive bowl. 2. Add the carrots, strawberries and herb of choice; toss gently. 3. Garnish with additional strawberries, lemon zest and lime zest. 4. Cover and refrigerate because this salad will *vastly* improve if it is refrigerated for at least 3 hours. |
