This recipe was another one put together with ingredients that I 'gave' to Keni, and they came together in the most amazing way. The dish was sweet, crispy and absolutely delicious. Ingredients:
4 parsnips, grated |
1 carrot, grated |
2 tbs flour |
1 shallot, minced |
1 egg (2 may be neededi only had 1 left) |
1 tsp salt |
1/2 tsp pepper |
1 tbs parsley |
oil, for frying |
sauce |
4 tbs goats cheese |
2 tsp balsamic vinegar |
1 tsp butter |
1/2 tsp olive oil |
1 tsp pepper |
Directions:
1. Mix all ingredients together, and form small patties 2. Heat oil in a pan (1/4 deep oil) 3. Carefully place each patty in the oil, and fry until golden brown, and flip over 4. Sauce, combine ingredients and melt in a pan over low heat. Serve warm on top of each patty. |
