simple cooked soup with garlic and onions, blended with fresh cilantro Ingredients:
2 tablespoons olive oil |
1 small onion finely chopped |
2 cloves of garlic finely chopped |
3 small carrots peeled and chopped |
16 oz fresh vegetable stock |
salt and pepper to taste |
1/2 cup cilantro leaves |
Directions:
1. heat oil in a pan, add onions and garlic and fry for 3-4 minutes or till 2. softened. add carrots and continue to fry for another 4 minutes or until softened. add stock bring to boil and then reduce heat and simmer for 8-10 minutes, or until carrots are tender. stir in cilantro 3. salt and pepper. cool slightly. transfer mixture to a blender or a food processor and blend till smooth. pour or ladle soup into soup dishes, sprinkle some chopped cliantro,crusy bread and enjoy |
