Carrot And Butterbean Soup |

a lovely winter warmer soup, nice with crusty bread dipped in it Ingredients:
4-5 carrots peeled and diced |
1 onion diced |
2 cloves of garlic finely chopped |
2 medium potatoes peeled and diced |
500ml veg stock |
fresh ground pepper |
2 tbsp tomato puree |
200g tin of butterbeans |
2 tbsp veg oil |
Directions:
1. gently fry the onions and garlic until soft 2. add the stock and vegatables ( not the butterbeans) to the onions and simmer for 15 mins or until the potatoes are cooked through 3. allow the soup to cool a little and blend 4. pour back into the pan and add the beans and tomato puree and pepper 5. reheat the soup 6. adding more stock or water until your desired thickness |
