                    This Passover kugel is not a heavy one. It is sweet, crunchy, and colorful. The lemon offsets the sweetness nicely. Ingredients: 
                    
                        
                                                1/2 cup vegetable oil  |  
                                                2 pounds carrots  |  
                                                2 pounds of apples  |  
                                                2 tsp. sugar  |  
                                                2/3 cup matzoh meal  |  
                                                1 tsp. ground nutmeg  |  
                                                1 tsp lemon juice  |  
                                                grated zest of a small lemon  |  
                                                1 cup toasted almond slivers  |  
                                                
                     
                    Directions: 
                    
                        
                            
                                1. Preheat oven to 350. Lightly oil a 2 quart shallow baking dish. 2. Peel the carrots and shred them in a food processor - you will net about 8 cups. 3. Core and peel the apples. shred them as well. You'll net about 2 cups. 4. Coarsely chop the nuts except for a reserved 1/4 cup to top the dish with. 5. Combine all but 1/4 cup of the almonds in a large bowl. 6. Transfet the mix to the prepared dish. 7. Sprinkle the reserved nuts on top and bake about 25 minutes, until the top just starts to brown.                              |
