This low-fat strawberry bread is a delicious combinations flavor combination of tart and sweet! You can substitute other fruits like peaches or blueberries to mix things up or combinations, like strawberries and bananas.
Ingredients:
2 cups unbleached flour
1 cup granulated sugar (you can cut back to 3/4 cup-bread is very sweet with a full cup)
1/2 teaspoon baking soda
2 teaspoons baking powder
1 teaspoon cinnamon
1/4 teaspoon salt
2 egg whites -- whipped
1 teaspoon vanilla
1/2 cup applesauce -- at room temperature
2 cups strawberries -- chopped
Directions:
1. Preheat oven at 350.
2. Prepare pan(s) with cooking spray and flour.
3. In a mixing bowl, combine flour, sugar, baking powder, baking soda, cinnamon, and salt.
4. In another bowl, combine egg whites, vanilla, applesauce, and strawberries.
5. Mix dry ingredients with wet ingredients just until moistened.
6. Pour into prepared loaf pan and bake for 35-45 minutes.
