This is a chocolate version of a cookie I previously used to bake, though once I added the cocoa,I never made the original ever again!! So chewy and good, they don't last long in my house.I made a batch this morning so my daughter could take some to school. Ingredients:
1 1/4 c.soft butter (no margarine,please) |
2 c.sugar |
2 eggs |
2 tsp.vanilla |
2 c.flour |
3/4 c.unsweetened cocoa + 1 heaping t. |
1 tsp. baking soda |
1/2 tsp. salt |
1/2 (12 oz) bag of chocolate chips |
1/2 (12 oz) bag of chopped walnuts |
Directions:
1. Preheat oven to 350 degrees. 2. In a food processor, cream the sugar and butter. 3. Add eggs and vanilla, mix until dough is like lumpy sand. 4. In a separate bowl, combine flour, cocoa, soda and salt. 5. Add egg mixture to flour mixture and hand stir until blended into a gooey chocolatey blob. 6. Add chips and walnuts. 7. Shape into large balls and bake on ungreased cookie sheet for EXACTLY 11 minutes. 8. **Please do not overcook these-I have experimented enough with these to know just the right time to take them out** 9. The cookies will appear mushy, but will firm up when cooled, though they stay soft and chewy for about 2 days. 10. **Flavor variations:add white chips instead of chocolate/or add mint extract and mint chips instead of vanilla. |
