From The World Goes Raw Cookbook by Lisa Mann. Zesty and refreshing! Even my kids love it. I add sprouted wheat berries and chopped avocado to the topping. Ingredients:
1 cup walnuts, raw unsalted |
1 head watercress, leaves roughly chopped |
4 cups baby spinach |
1/2 cup water |
1/2 cup fresh cilantro, chopped (i subbed with mint) |
1/4 cup lemon juice, freshly squeezed |
1 tablespoon coconut oil |
1 tablespoon gingerroot, chopped |
1/2 teaspoon sea salt |
1 cup peeled diced cucumber |
Directions:
1. Pulse walnuts in food processor until completely chopped. 2. Add remaining ingredients and mix until smooth and creamy. 3. Spoon into bowls and add topping. 4. Serve and enjoy! |
