Carribean Spinach Bisque (Raw)

From The World Goes Raw Cookbook by Lisa Mann. Zesty and refreshing! Even my kids love it. I add sprouted wheat berries and chopped avocado to the topping.
Ingredients:
1 cup walnuts, raw unsalted
1 head watercress, leaves roughly chopped
4 cups baby spinach
1/2 cup water
1/2 cup fresh cilantro, chopped (i subbed with mint)
1/4 cup lemon juice, freshly squeezed
1 tablespoon coconut oil
1 tablespoon gingerroot, chopped
1/2 teaspoon sea salt
1 cup peeled diced cucumber
Directions:
1. Pulse walnuts in food processor until completely chopped.
2. Add remaining ingredients and mix until smooth and creamy.
3. Spoon into bowls and add topping.
4. Serve and enjoy!
