2 c dry pinto beans |
6 c water |
1 t salt |
2 t canola oil |
1 clove garlic, minced |
2 green onions, chopped |
1 large tomato, chopped |
1 t lime juice |
1/8 t ground cloves |
1 t chopped parsley |
1/4 t pepper |
2 c rice |
Directions:
1. Soak overnight: beans, salt, and water. 2. Bring to a boil, reduce heat, and simmer just until tender - about 40 minutes. 3. Drain beans, RESERVING LIQUID. 4. Heat in a large covered skillet: remaining ingredients EXCEPT RICE AND RESERVED LIQUID. Saute about 5 minutes. 5. Add: rice and 4 c reserved bean liquid (adding water if necessary). 6. Bring to a aboil, cover, reduce heat to simmer, and cook 20-25 minutes without stirring. |
