A tasty grain salad made of quinoa and Caribbean tastes. Ingredients:
1 cup quinoa |
2 cups water |
4 green onions, chopped |
2 mangoes, diced |
1/4 cup sliced almonds |
1/4 cup dried cranberries |
3 tablespoons fresh cilantro, chopped |
1/2 cup lime juice |
1 cup white balsamic vinegar |
1 salt and pepper, to taste |
Directions:
1. Rinse and drain quinoa. Toast quinoa in a hot empty pan for about 5 minutes. Add 2 cups of water. Bring to a boil, cover, and simmer over medium heat about 15 minutes until all water is absorbed. Let quinoa cool. 2. Gently stir remaining ingredients into quinoa. 3. Serve at room temperature or as a cold salad. |
