Carribean Lime Cilantro Potato Salad |

This dish puts a Carribean flavor to the plain potato salad side dish. Ingredients:
small bag rose potatoes (2-3 lbs) |
1 bunch of cilantro |
1/2 tea. of crushed garlic |
1/2 cup mayonaise |
1/2 tea. salt |
1-2 limes |
1/2 a red onion, diced |
Directions:
1. Wash potatoes and leave skins on if desired. Gives salad a nice pop of color. 2. Place in a pot of water to boile till soft but not mushy. approx 30 -40 mins depending on size of potatoes. 3. Make sure to not over cook, you want them firm. 4. While potatoes are boiling, dice the onions, and cilantro 5. When potatoes are done, (fork inserted easily ) drain off water and leave to cool. You can place then in a bowl and put in the freezer for about 1/2hr. This will help if they are too soft, and will help them to not mash easily when mixed. 6. Cut potatoes into cubes, not too small, bite sized pieces and place in large serving bowl. 7. Add mayo, more if it's too dry, depends on your preference. 8. Add salt, onion, cilantro, and garlic, mix till coated. 9. Squeeze lime juice over the whole salad, and mix to coat. 10. Adjust salt if needed. 11. Note* You can substitute fresh squeezed orange juice for a different spin on this salad, either way it's sure to be a hit. 12. Enjoy! |
