Carrots with horseradish is a delicious, traditional Winter side dish in the Trenito region of Italy. Though best with freshly grated horseradish root, the prepared (not cream style, though) kind is sufficient. With a side of grilled white fish it`s a delicious lunch! Read more ! Ingredients:
1 lb fresh carrots, scubbed well |
2 tbsp skim milk |
1/2 cup plain, non-fat yogurt |
1/2 tbsp lemon juice |
6 tbsp grated horseradish |
1/4 tsp salt |
Directions:
1. With a vegetable peeler, cut carrots into long, thin ribbons. Place in a bowl of ice water mixed with 2 tbsp lemon juice for 1 hour. 2. Drain and pat the carrots dry. 3. Divide carrots between chilled serving bowls. 4. Combine the milk, yogurt, lemon juice, horseradish and salt in a small bowl. 5. Pour dressing over each bowl of salad, and serve immediately. |
