Carol's Hot Chicken Salad |

A Kathie Lee Gifford recipe. Ingredients:
2 cups chopped cooked chicken |
1 cup diced celery |
1/2 cup slivered almonds |
1 tablespoon lemon juice |
3 hard-boiled eggs, chopped |
1 (10 3/4 ounce) can cream of mushroom soup |
1/2 onion, minced |
1/2 teaspoon salt |
1/4 teaspoon pepper |
1/2 cup mayonnaise |
2 cups ritz cracker crumbs |
Directions:
1. Combine all of the ingredients, except for the crackers, in a greased casserole dish. 2. Top with crushed Ritz crackers. 3. Bake for 20 minutes at 350 degrees. |
