My friend Caroline makes this. It's a moist loaf that uses chopped apples. My husband adores it and such was my concern that he would leave me one day, following the trail of freshly baked gingerbread up the road, that I persuaded her to give me the recipe. Ingredients:
150 g butter |
175 g soft brown sugar |
2 tablespoons treacle |
25 g plain flour |
1 teaspoon baking powder |
2 teaspoons bicarbonate of soda |
2 teaspoons ground ginger |
150 ml milk |
1 egg, beaten |
2 chopped apples |
Directions:
1. Melt together the butter, brown sugar and treacle. 2. Mix the rest of the ingredients together and bake at 170 degrees Celcius for 30 - 35 minutes. I use a pan about 10 x 8 inches. |
