Carolina Mustard Barbecue Sauce

Another big batch BBQ sauce found in The Times-Picayune provided by SC BBQ pit-master J.T. Handy. Fourth of July is right around the corner! Thinking slow smoked ribs with this sauce... maybe some chicken too!
Ingredients:
1/2 gallon prepared mustard
1 1/2 cups apple cider vinegar
5 cups unbleached cane sugar
1 tablespoon cajun seasoning
1 tablespoon garlic powder
1 tablespoon black pepper
1 tablespoon onion powder
1/2 teaspoon smoked paprika
1/2 teaspoon salt
Directions:
1. Combine all the ingredients and slowly bring to a simmer. Simmer on low heat (using a heat diffuser if you have one or a heavy bottomed non reactive pot) until the sugar is fully dissolved.
2. Keep a close eye as this sauce can scorch very easily.
3. Stir frequently.
4. Let cool.
