Easy weeknight meal Ingredients:
6 (10 inch) flour tortillas |
1 lb beef flank steak (cut into thin strips) |
3 tablespoons worcestershire sauce |
1/4-1/2 teaspoon hot pepper sauce |
2 -3 minced garlic cloves |
2 medium baking potatoes, cut into 1/2 inch cubes |
1 lb fresh mushrooms, sliced |
1 medium onion, chopped |
3/4 cup shredded cheddar cheese |

Directions:
1. Heat tortillas as package indicates. 2. In a medium bowl, combine steak, Worcestershire, hot pepper sauce and garlic. Mix well. 3. Heat a non stick dutch oven on medium high till hot. Add the meat mixture and cook and stir for 3 to 4 minutes until browned. 4. Add potatoes and onions. Cook for 1 minute. Reduce heat; and simmer for about 12 to 15 minutes or until potatoes are tender. 5. Spoon mixture evenly down the center of each warm tortilla. Sprinkle with cheese: roll up. Serve with salsa. |
