This is a non-spicy version from the Dominican Republic. Adapted from the Pan American Round the World Cookbook. Prep time includes marinating time. Serve with rice. Ingredients:
4 tomatoes, chopped |
3 onions, chopped |
2 garlic cloves, minced |
2 teaspoons salt (to taste) |
1/2 teaspoon pepper (to taste) |
4 lbs boneless pork, cut into strips 1/2-inchx1/2-inchx2-inch |
3/4 cup olive oil |
3/4 cup water |
Directions:
1. Combine tomatoes, onions, garlic, salt and pepper in a bowl and mix well. 2. Add pork chops and stir well. 3. Cover and set aside for 1 hour. 4. Remove pork from bowl and set vegetables aside. 5. Heat oil in a large skillet until it begins to smoke. 6. Add pork and cook over high heat 5 minutes without stirring. 7. Stir and cook 5 minutes, stirring occasionally. 8. Combine water and reserved vegetables. 9. Add slowly to pork, stirring constantly. 10. Cover, reduce heat to low, and cook for 45 minutes. |
