From Delightfully Healthmark. Serve with Ensalada Escabeche and warm tortillas. Ingredients:
1 lime, juice of |
1 lime, zest of |
1 garlic clove, minced |
1/4 cup chopped fresh cilantro |
1 teaspoon low sodium soy sauce |
1/4 teaspoon dried oregano |
1/4 teaspoon cumin |
fresh ground black pepper |
1 lean flank steak, well trimmed |
Directions:
1. In a zip-top plastic bag, combine lime juice, zest, garlic, cilantro, soy sauce, oregano, cumin, and pepper to taste. Pierce steak all over with fork then place in the bag. Seal top and turn bag to coat meat thoroughly with marinade. Marinate, refridgerated, 1-2 hours. Drain well. 2. Broil or grill steak until desired doneness. Slice into thin strips and serve. |
