From The Foods and Wines of Spain. Ingredients:
5 tablespoons olive oil |
2 onions, sliced |
2 garlic cloves, minced |
1/2 lb cured ham, cut in 4 long thin slices, each cut in 4 pieces |
1 1/2 lbs beef, such as sirloin steak, cut in 1/4-inch-thick slices |
2 tablespoons flour |
1 1/2 cups beef broth |
1/2 cup dry red wine |
Directions:
1. Heat 2 tablespoons olive oil in skillet. 2. Add and saute sliced onions and minced garlic slowly, cover til onions are tender. 3. Add ham, stir and remove from the heat. 4. Heat 1 tablespoon of olive oil in another skillet till smoking point. 5. Add the sirloin and fry quickly until just brown. 6. Remove and keep warm. 7. Put the last 2 tablespoons of olive oil in skillet. 8. Stir in flour and cook for a few minutes, add beef broth and dry red wine. 9. Keep stirring until smooth and thickened. 10. To the sauce add the onion mixture. Cook 5 minutes. 11. Add the sirlion back to the pan and heat for 1 minute. |
