Earthy shitakes and pungent cheeses A great light main course with a salad or a wonderful appetizer photo and recipe from Cooking Light Ingredients:

1 tbl olive oil |
8 c vertically sliced yellow onion (about 2 lbs) |
5 c sliced shitake caps (about 10 oz whole) |
4 garlic cloves, minced |
3 thyme sprigs |
1/2 c dry white wine |
1 (14 oz) can fat free, low sodium chicken broth |
1 (14 oz) can fat free, low sodium beef broth |
1/2 tsp salt |
1/2 tsp pepper |
toasts |
12, 1/2 inch thick slices french baguette, toasted |
1/4 c (1 oz) gruyere |
1/4 c ( 1 oz0 crumbled gorgonzola |
1/2 tsp finely chopped fresh thyme or 1/4 tsp dried |
Directions:
1. Soup 2. Heat oil in a large pan over medium high 3. Add onion to pan; saute 15 mins over medium low or until tender and a deep golden brown(about 40 minutes), stirring occasionally 4. Increase heat to medium 5. Add mushrooms to pan; cook 10 mins. or until tender, stirring frequently 6. Increase heat to medium high 7. Stir in garlic and thyme sprigs; cook 2 minutes or until most of the liquid evaporates 8. Add broth to pan; bring to simmer 9. Reduce heat and simmer 45 minutes 10. Stir in salt and pepper and discard thyme sprigs 11. Preheat broiler 12. Arrange bread slices in a singl;e layer on a baking pan 13. Top each with 1 tsp of both cheeses 14. Broil 2 minutes or until cheese is melted 15. Sprinkle thyme over cheese 16. Ladle about 1 cup soup into each of 6 bowls; top each serving with 2 toasts |
