We found this recipe for our Boboli bread and loved it. Obviously you can play around with different cheeses and toppings, but this is the way we made it. Be sure to cook the onions until browned but not burned.
Ingredients:
1 premade pizza crust (boboli bread, focaccia, or your own recipe)
2 tablespoons butter
1 tablespoon olive oil
2 onions, chopped
2 garlic cloves, minced
salt and pepper
8 slices deli provolone cheese
1/4 cup greek olive, cut in half
olive oil
Directions:
1. Melt butter and 1 tablespoon olive oil in a heavy skillet over medium heat.
2. Cook onions and garlic in butter and olive oil over medium-low or low heat until they are browned and carmelized - 10 to 15 minutes. Stir frequently.
3. Heat the oven to 450 degrees.
4. Spread a little olive oil on the bread or crust and place on an ungreased cookie sheet.
5. Spread the onion and garlic mix on the bread.
6. Distribute the cheese evenly on the bread.
7. Sprinkle olives over the cheese.
8. Bake 8 to 10 minutes or until cheese is melted and the exposed crust is slightly golden brown.
9. Cool 5 minutes and cut into wedges.
