Carmalized Onion and Cheese Macaroni |

This started out as macaroni and cheese, but I don't know if it can really be called that. It calls for breadcrumbs but I actually use saltine cracker crumbs. Ingredients:
8 ounces elbow macaroni |
1 tablespoon olive oil |
1 medium onion, sliced |
8 ounces shredded cheddar cheese |
16 ounces cottage cheese |
10 ounces frozen chopped spinach, thawed and drained |
1/4 cup breadcrumbs |
salt |
pepper |
dried basil |
dried dill weed |
Directions:
1. Preheat oven to 350 degrees. 2. Boil macaroni until al dente 3. Cook the onion in oil until it is carmalized. 4. In a bowl, combine cheeses, spinach, onion, seasonings, and macaroni. 5. Spread mixture into a 13x9 pan. 6. Top with breadcrumbs, or cracker crumbs. 7. Bake for 30-35 minutes. |
